    植物由来の廃棄物は多糖を主成分とする再生可能な資源と捉えることができる。これらを酵素分解して得られる物質は植物性機能性物質(高付加価値物質)に変換することが可能である。これまでに種々の糖質分解酵素の研究を行ってきた経験を生かして、本研究テーマでの共同研究は可能である。また、植物バイオマス中には生理機能を有するポリフェノール等の二次代謝産物が残存している。酵素を利用した構造改変技術による高機能化の研究も行っている。

Outline of education staff

  • (糖質科学)糖質は生体内においてエネルギーや細胞成分を担う重要な分子であり、また今日では食品をはじめとする多くの分野において利用されており、産業的にも非常に重要である。本授業では、糖質の構造と機能を中心に具体的な研究例を挙げながら、化学と生物学の両面から総合的に解説する。
    (応用酵素学)各種実用化酵素について概説するとともに、酵素による物質生産、人工的酵素改変法、遺伝子組換による酵素の大量生産法、新機能酵素、極限環境酵素などについても講述する。
